How long have you been a chef?

18 years and counting

Who was your finest mentor?

My college lecturer who gave me a love for flavours and passion for igniting peoples taste buds.

What is the most valuable lesson you have learnt in the kitchen?

Simplicity. Hot food/hot plates. I am a believer that to maintain optimum temperature is to maintain the best taste texture and quality.

Which chef do you admire most and why?

Tom Kerridge for his cooking ability and style and his fantastic personal achievements.

How would you describe your style of cooking and current menu?

Fresh and seasonal. Creative, hand made sour dough, vibrant salads and daily specials

What do you hate most about the restaurant business?

Trip Advisor! the bain of my life!

What meal do you like cooking most for yourself?

British Classics, slow cooked lamb or roast meats

What is your favourite drink?

A Rye Whiskey and Dry ginger – crisp and refreshing!

What car do you drive?

Black Corsa SRi

What do you do for fun?

I am very active, play football weekly, gym daily and have a passion for all things gaming and Moto GP!

Engaged

Which team do you support?

Stoke City FC

MASH – Modern American Steak House – London

What foods are cool at the moment?

Authentic Sour Dough, topped with local produce and wood fired of course.

Who is making it happen in the industry at the moment?

Jamie Oliver, despite the negative press he is really trying to give the future generation a better start to life and increase understanding of food, products and production.

Poor service, underwhelmed dishes, cold plates for hot food.
