Patatas Bravas actually means fierce Potatoes. These lovely things are moreish but perfect on a cold evening great for bonfire night
In a deep oven proof tray place oil and chopped potato’s and Chopped chorizo, plus the salt and pepper
Toss the potatoes in the oil and seasoning and put in the oven at 180 for 15 mins
Then add onions, garlic paprika and chilli coating all in the oil and cook for another 10 minuets
Then add the Tomato’s mix up together and cook for a further 10 to 15 minutes
Top with fresh herbs
You can spice them up if you wish too, by adding more chilli
You can eat alone or as a side dish. Whilst it may not be the classic way to eat them, it is also nice topped with Cheese.

I make a one-tray method of Patatas Bravas to enjoy on their own or with other things.
1kg of potatoes cut in to 3cm cubes (waxie ones hold their shape but can use any)
5 tablespoons olive or rapeseed oil
Flaky sea salt
200g Chopped chorizo
Pepper for seasoning
1 onion, finely chopped
3 crushed cloves of garlic
A handful of thyme sprigs, leaves only, chopped
1 small, fairly hot red chili, deseeded and finely chopped or dried chilli seeds
400g tin of chopped tomato’s
2 teaspoons sweet paprika
2 teaspoons smoked paprika
2 teaspoons of mixed herbs
To finish off with a handful of parsley and thyme roughly chopped
