These are wonderful hot or cold and a great sharing food with friends, They are worth the pre time the day before believe me and do double of what you think as they will go! Easy to make less spicy for younger children but hot as you like for the big kids. There are 3 parts to this but it really is worth it, the more time you wait the better they are, it's a lot of waiting rather than actually time spent putting together, but once you have made them you will make them time and time again 3 stages are Brine, Rub then a Glaze its well well worth it they are yummy!
In a large pan bring all the ingredients to the boil, then cool.
Once cooled put the chicken wings in the mixture and place in the fridge for 24 hours (it really is worth it)
After that drain and rinse in cold clean water then pat dry chicken wings with paper towel before coating in the rub.
Mix all ingredients together to create the rub.
Rub the wings in the mixture and coat them all over.
Place on a baking tray in the oven at 140 and cook for 1 and ½ hours checking and turning over half way through.
Bring all ingredients in a pan to the boil to make the glaze.
When cooked and still hot pour the glaze over the wings and serve hot or chill down and eat cold.

2 bay Leaves
1 tbsp. Pepper corns (I used mixed but can use black white or red)
1tbsp coriander seeds or dried coriander
2 tsp Smoked Paprika
1tsp garlic powder
1tsp onion granules
1tsp of Paprika
1tsp of sea salt
30g Dark brown sugar
20g caster sugar
1tbsp Soy sauce
50g Apricot Jam
1 tbsp. of Srirachas hot chilly sauce
2tsp red wine vinegar
I add some fresh or dried chilly flakes (if you want some extra heat)
