Whilst both these exciting wine nations produce some sensational wines, you can find amazing wines from Peru, Bolivia, Brazil and Uruguay too! Join us to try some exciting wines and wine styles from some of these superb countries and find out they pair with different food.

Richard will guide you through each wine together with sharing many fun and useful wine facts and tips and delve into more detail about the wine nations and regions of South America. Five of our six quality wines will be paired with canapés and/or small plates inspired by 2 AA rosette The Forge’s seasonal menu to show how these amazing wines change with the right food match! We’ll start off with a super value ‘quaffer’ that you can enjoy without food.

The Forge is within Chester’s Hotel Indigo and Executive Chef Dan Regan was awarded two AA rosettes in 2024 and again for 2025. Dan previously worked at the two Michelin-starred Ynyshir under Chef Patron Gareth Ward and we can’t wait to share Dan’s culinary skills and sensational dishes with our guests! The Forge works with some incredible suppliers which includes acclaimed butcher Aubrey and Allen who have recently been awarded a Royal Warrant by His Majesty The King. With an emphasis on wild produce and sustainability, the open kitchen at The Forge cooks over wood and charcoal with meats aged on the premises. Oak, Ash and Beech from local forests provide the fuel, imparting extraordinary flavour into the beef, fish, lamb, game and venison on the menu.
