We are absolutely thrilled here at Taste Cheshire to share some monumental news from one of our favourite local producers, The Weetwood Team! They’ve just announced the release of their most mature and complex whisky expression to date: The Cheshire Single Malt English Whisky – 5 Year Old.

This is more than just a new bottle on the shelf—it’s a significant milestone in Cheshire’s journey into the world of English whisky, representing half a decade of patience, passion, and meticulous maturation right here in the county.

And as if that wasn’t enough to celebrate, we must give a massive, well-deserved cheer! The release of this extraordinary whisky comes in the same week that Weetwood was crowned Gold Winner for Cheshire’s Drink Producer of the Yearat the prestigious Taste Cheshire Awards! This public-voted accolade is a true testament to the exceptional quality and dedication of the Weetwood Brewery and Distillery team—the same team that crafted this glorious new whisky expression.

Time Well Spent: Depth, Character, and Refinement

This special, limited release has been patiently matured for over five years in a specially selected range of casks. This extended period has worked magic, amplifying the whisky’s natural smoothness and developing remarkable layers of richness, warmth, and lingering complexity.

The team at Weetwood has poured their expertise into this expression, giving it the time it needs to truly shine. The result is a balanced, deep, and characterful single malt that reflects a new level of sophistication for The Cheshire range.

The Master’s Notes: A Luxurious Tasting Experience

Want to know what all that extra cask time tastes like? The official tasting notes promise a truly silky and complex experience:

Nose: Delightful aromas of vanilla, toffee and figs lead the way, subtly joined by roasted almonds before evolving into a delicate marzipan richness.
Palate: Silky layers of honeyed malt open up, moving onto warm waves of caramel and dried fruits.
Finish: A luxuriously lingering smoothness with a silky, nutty sweetness that slowly gives way to a mellow,satisfying spice.

This expression is bottled at a perfect 46% ABV and is presented as natural colour and non-chill filtered, ensuring all the rich flavour and character from the casks are retained.

The Secret Ingredient: A Symphony of Casks

The glorious complexity of this 5-Year-Old comes down to Weetwood’s ambitious cask program. The initial maturation took place in single-use, ex-bourbon, American oak quarter casks that were then shaved, toasted and re-charred to a medium/heavy degree.

For the all-important final touch, the whisky was finished in a hand-picked selection of European oak casks that previously held fortified and fine wines, including Port, Red Wine, Madeira, and Moscatel. This careful finishing process is what provides those rich dried fruit and spice notes, locking in its unique flavour profile.
