Baked Eggs with Spinach, Chestnut Mushrooms and Cherry Tomatoes #Recipe

Good for breakfast, brunch, lunch or light dinner. They are Full of goodness and flavour. A great healthy dish to kit start 2019!

Preheat the oven to its higher temperature .
Grease 2 ovenproof ramekins, bowls or small baking dishes with a little oil or butter

Tear some spinach, quarter the tomatoes, slice the mushrooms season and pop some chilly flakes in and pop in to dishes

Place into the prepared dish, crack a couple of eggs on to the top and season with salt and pepper. And more chilly flakes if you wish

Place in the hot oven for 8 to 10 minutes, or just till the whites are set but the yolks are still runny, then serve in dish.

4 large free-range eggs
freshly ground black pepper
Salt
Chilly flakes
25 g fresh spinach
100g cherry tomatoes
60 g chestnut mushrooms
