For the second in our ‘In the Kitchen’ series, Briony and I were so excited to spend a few hours learning about Burritos with Mama K’s. The series involves our Taste Cheshire Team spending ‘a day in the life of’ one of our Members, and as we both love Mexican food, Mama K’s was a real treat.
So what does go on behind the scenes at Mama K’s?
We arrived at lunchtime to be greeted by the lovely Krista (Mama K’s founder and owner) and Ciaran who is one of the team working with Krista. Almost before we got through the door Krista insisted we have lunch! Neither Briony or I resisted the offer. We both opted for the Burrito bowl which was rather large in its portion and as deliciously and tasty as it was we just couldn’t eat it all . The Burrito bowl consisted of:- rice, pinto beans, peppers and onions, meat of your choice (garlic and lime chicken, pulled pork or chilli beef), lettuce, cheese, queso, guacamole, sour cream, salsa. I chose pulled pork and Briony chose chicken. The tastes and flavours in the bowl were incredible, I like my food quite spicy so opted for the medium salsa which was just perfect for my taste buds and Briony had the mild.
We then set to learn about how much work and effort goes into all of the food that Krista and the team prepare. Everything is made fresh on site in their commercial kitchen every single day. The Pinto beans take 4 hours to cook. the pork takes 4 – 6 hours in the oven and is cooked fresh every day. Guacamole and Queso are made daily. I could go on as there are so many aspects of each ingredient that goes into each product.
Online orders over the lunch period were coming in fast, and the process Krista has in place runs incredibly smoothly. Once the order is received and made-up it is passed to the Ella (another key member of the team) to deliver to the customer. They have free delivery within a 3 mile radius of their kitchens in Chester on orders over £14.
Our challenge was to make the delicious chilli corn bread. Wow it was good. We were very proud of the breads we made. These go out with soup orders or can be ordered as a side. So we were first let in on the very secret recipe, then mixed all the ingredients together put, rather messily, in the baking trays then in the oven and voila 30 minutes later, beautifully raised breads. How cute are they.
The current deal on Mama K’s website is £8 for a main course, a side and a drink. This is a great deal and well worth ordering. We love the chilli corn bread and the corn chips for sides. Everything Mama K’s do is authentic, fresh and fantastic.
