Cheshire cheese is believed to be Britain’s oldest named cheese, with some even suggesting its origins can be traced back to the Romans who settled in Chester around AD70. While the exact details are debated, it’s certainly clear that Cheshire cheese has been a staple for centuries. It was even mentioned in historical records like the Domesday Book.

By the 18th century, Cheshire cheese was immensely popular, with almost every farm in the county producing it. It was so sought after that special cheese fairs were established in market towns like Nantwich and Whitchurch. It was highly valued for its ability to travel well, enduring long journeys by horse and cart to reach markets as far as London, where it graced the tables of the gentry and featured on the menus of leading clubs. For a time, it was even the only cheese bought for consumption by the British Navy! The distinctive slightly salty flavour of Cheshire cheese is often attributed to the region’s vast underlying salt deposits, which subtly infuse the grasslands where the dairy cows graze.


A Family Tradition Begins

Over a century ago, in the farmhouse kitchen at Laurels Farm, Joseph Heler’s grandmother faithfully crafted a single Cheshire Cheese every day. This cheesemaking expertise was meticulously passed down through the generations to Joseph Heler himself, who in 1957 established his own company, Joseph Heler Cheese. He carried forward these rich traditions, initially focusing on producing 40lb rounds of unpasteurised Cheshire cheese. Just three years later, in 1960, the quality of his cheese was recognised with eight championships in national cheese shows.


Still Rooted in Tradition, Expanding for the Future

Today, the company remains firmly planted at Laurels Farm in Hatherton, Nantwich, still the home of that original farmhouse. They continue to produce traditional cheeses, including their signature Cheshire cheese, all made to time-honoured recipes that have stood the test of time. Joseph Heler Cheese is proud to be one of the last remaining Cheshire cheesemakers actually located within the county of Cheshire, ensuring a truly authentic “Cheshire from Cheshire.”
