How long have you been a chef?

18 Years

 

Who was your finest mentor?

Tom Hughes

 

What is the most valuable lesson you have learnt in the kitchen?

Don’t open a restaurant.

 

Which chef do you admire most and why?

I prefer to take influence from numerous different chefs rather than idolising someone.

 

How would you describe your style of cooking and current menu?

Modern, with a focus on micro-seasonal ingredients and the idea of farm to plate cooking.

 

What do you hate most about the restaurant business?

There are constant frustrations but I don’t particularly hate anything.

 

What meal do you like cooking most for yourself?

Lamb Tagine

 

What is your favourite drink?

Original Lucozade & Coffee

 

What do you do for fun?

Spending time with my Family, Walking, Anything to do with music/social events.

 

Married or Single – if married to whom and how long – children?

I have 2 Children with my girlfriend of 12 years.

 

Which team do you support?

Liverpool

 

Taste Cheshire are paying – where would you like to go for a meal?

Blue Hill, New York

 

Who is making it happen in the industry at the moment?

I think the people who like ‘Action Against Hunger’ are the people I admire within this industry. Currently, not only are they pro-actively trying to help people all over the world, but they’re doing so by continuously involving people from all different sectors of the industry.

 

What are your three favourite films?

Fear & Loathing in Las Vegas, Dead Mans Shoes, The Big Lebowski.

How long do you see yourself being a chef?

I will always be a chef!

 

What’s the secret to a restaurant dish?

There are no secrets, every dish/chef/restaurant is different.

 

What annoys you most when you go out for a meal?

I think anyone who works within the industry try to be as understanding as possible when out for a meal, it would take a lot for something to really annoy me.
