Happy St David's Day! - Dydd Gŵyl Dewi Hapus! This classic Welsh cake recipe couldn’t be easier; it’s a great recipe to get the kids involved baking too as it requires little effort and takes under 30 mins!

Mix all the dry ingredients in a large bowl
  • Add butter and lard and rub with fingers (like making scones)
  • Mix in currents
  • Add egg and mix with a knife, add splash of milk
  • Bring mixture together with your hands
  • Roll out to a thickness of around 5mm and cut out rounds using a 6cm fluted cutter
  • Keep going until you use up all the dough
  •  Traditionally, a bakestone is used to cook this little treats, but I use a large frying pan or griddle –   Rub it with butter and wipe the excess away. Once warm, place the Welsh cakes in the pan and cook for 2–3 minutes on each side, or until caramel brown. (Be careful not to heat the pan too much or they will burn!)
  • Dust generously with caster sugar
  • They keep in an air tight container for a week, if you can resist not eating them hot with a paned! (cup of tea!)

50g butter cubed
50g lard cubed plus extra for frying ( or just use butter)
1 egg, beaten
50g currents/sultanas
Splash milk
