#TCTUESDAYS ON DEE 106.3 WITH HICKORY’S SMOKEHOUSE #Radio

This week myself and Gavin were joined by Callum from Hickory’s Smokehouse. As I’m sure most locals are aware Hickory’s is Β an authentic American BBQ restaurant set on the banks of the River Dee in the historic City of Chester. Here you can enjoy a traditional style of cooking that has its roots in the US, but is becoming just as popular over here. With their own genuine smoker, Hickory’s is becoming the place to experience authentic American barbecue in Chester. Hickory’s is growing and now has 6 restaurants across the UK including; Burton Green, Castle Bromwich, Chester, Wall Heath, West Kirkby and Rhos-On-Sea.

Hickory’s is always a fan favourite during the summer, because of there fabulous outside area’s, but where else can you think of visiting on Independence Day, than our own little bit of the USA in Cheshire. So Hickory’s will celebrating in style and we are all invited, they are holding a proper American Yard Party this Sunday from 12 noon- 5pm at Hickory’s on Rhos-On-Sea. They will have a live band, outdoor barbecue, face Painting, Balloon artists, Giant bubbles and of course a homemade lemonade stand. So bring the kids and come enjoy your own little bit of USA In Cheshire.

Hickory’s is known for it’s Brisket, which is smoked for between 14-16 hours in the proper American smokers, this gives amazing flavour and the meat in so tender. In true American style they would hate to waste good food so they created Burnt Ends. This the ultimate starter, whichΒ is basically the ends of the brisket which would be wasted, but insted they are used as an appetiser served with 4 different sauces, including the sweet bourbon glaze, the homemade BBq sauce, unfortuantly the recipe is a secret, this is a lovely sweet and smokey thick sauce perfect for all meats on the menu, and various hot sauces. All the sauces went really well with the smokey chicken wings as it isn’t just the beef that gets smoked at Hickory’s. Callum also brought us along the Louisiana hot sauce a fan favourite at Hickory’s which I wimped out in trying but Gavin enjoyed before attempting the ‘ Suicide sauce’ which despite being very hot was still packed with flavour, without burning your tongue.

To wash all of this down we tried 2 of Hickory’s wide range of Cocktails; the French Quarter Collins, with a base of Jack Daniels with lemon and pineapple juice and sugar syrup topped of with some raspberry. Then the Campfire Old Fashioned, served in a smoked glass again with a bourbon and sugar base, with maple syrup and black walnut bitters, this drink is very impressive in flavour and style and definitely worth a try.
