Perfect Fresh summery meal for the whole family.

  • Cut chorizo in to 3cm pieces and cook off in a frying pan till just beginning to colour
  • Cut up the chicken in to 2cm strips
  • Add chicken and cook off in the pan with the chorizo and leave to rest in pan
  • Chop the watermelon flesh into chunks, discarding the peel.
  • Peel and finely slice the onion, crumble the feta, then pick the mint leaves, tearing any larger ones.
  • Place it all into a bowl and combine. Drizzle over a little oil and season with black pepper.

1/4 Chopped up watermelon
1 red onion finely sliced
180 g feta cheese
1 bunch of fresh mint
Balsamic vinegar
Black pepper
Rocket
Extra virgin olive oil
