Fajitas spice mix is always good to have in the cupboard, it adds that tasty kick to so many dishes. I make this to use for Fajitas, but it can be tweaked to accommodate your chosen spice levels. You can use this for Enchilada, Quesadilla and Burrito's. Its so easy to add in more things or making it hotter depending on the people you are feeding, but this is good as a base and kids like it too.

Fajita Spic Mix

Use a pestle and mortar or a blender with a grinder to mix up all the ingredients. Then store in an air tight jar.

You can tweak this recipe by adding smoked Paprika if you like it hot, or You can add fresh garlic, ginger,lime juice and coriander, at the cooking stage to add a fresher flavour.

Slice peppers and onions

Slice chicken

In a frying pan heat oil

Cook off peppers and onions adding 2 teaspoons of the spice mix at the end of the cooking put to one side

Cook off the chicken in a little oil and fresh garlic and use 2 teaspoons of  spice at the end of cooking to mix it together with the cooked vegetables

Chop lettuce, tomatoes and cucumber

Warm tortillas wraps

Place all components on the table

Bowls of natural yogurt, grated cheese and salsa are the perfect accompaniments

Serving Suggestions

Best served family style with lots of different toppings for your guest to choose from.

Good on hot or cold days, as it brings some sunshine flavours to any day and good cold for lunch the next day or in a salad.

Ingredients

Fajita Spic Mix

3 teaspoon chilli powder
2 teaspoon chilli flakes
4 teaspoon paprika
2 teaspoon Cayenne Pepper
4 teaspoon garlic powder
2 teaspoon of onion granular or powder
4 teaspoon cumin
4 teaspoon coriander (can uses shears and crush down )
3 teaspoon dried oregano
3 teaspoon dried time
3 teaspoon sea salt
2 teaspoon fresh ground pepper

Fajitas

Sliced chicken breast or skinned and bones thighs cut in to strips
Sliced peppers deseeded
Sliced onion
Tortilla wraps
Tomato salsa
Sliced avocado
Sliced lettuce
Chopped tomatoes and cucumbers
Natural yogurt or sour cream

Equipment

Chopping board
Knife
Frying pan
Bowls
Blender with grinder attachment or pestle and mortar to crush and mix spice
Air tight jar
