Description

We are Ryan, Sheryl, Jake and Charlotte Walker, living in Cheshire but with hearts in South Africa.

Having been born and raised within a fourth generation farming family and both having attended Agricultural Colleges, it is of upmost importance to us that we only use British Meat in all our products.  This combined with our own knowledge and experience ensures we only source the best local produce in order to support British Farming.

After our first visit to South Africa in 2008 not only did we fall in love with the beautiful landscapes but also the culture and way of life of the South African people.

Biltong and Droewors hold a massive place in the South African culture and is a long held tradition going back to the pioneering South African forefathers.

It is from this new found holiday delicacy and a hobby Biltong drier Birthday present that The Weston Biltong Company was born, initially for our own delight but which has since grown to delight others, especially across Cheshire and North Staffordshire.

Our Process and Product.

Firstly the meat is bathed in Vinegar to help cleanse and tenderise the meat.

The meat is then marinated in our secret blend of herbs and spices made up of Coriander, Black pepper, salt and a few other special ingredients and the left in the fridge for 24 hours to ensure the flavours mature into the beef.

Once marinated the meat is hung in one of our custom made driers which dries the meat through a constant air flow and very low heat, too high or too quickly would cook the meat; (not quite the outcome we want!) This part of the process can take anything from 3 -7 days depending on the thickness and surface area of the steak and the fat content levels within it.

Once dried the meat is thinly sliced and flavoured with natural herbs and spices to the different taste variations of Original Biltong.  We currently have 14 different Biltong taste sensations to suit all different taste buds, from Original, savoury, sweet right through to spicy.

Although Biltong is our primary product we also produce ‘Droewors’ and Boerewors.

Droewors is a dried beef sausage which has had herbs and spices added to the minced meat.  This is then placed into a very fine skin and hung to dry in the same way as the Biltong.  We currently offer three flavours of Droewors which are Original, Chilli & Garlic.

Boerewors is translated into English as ‘Farmers Sausage’ our Boerewors are made from nothing but British Beef with added herbs and spices.  We add no water, no rusks or any other fillers to bulk up the product.

Boerewors are one big meaty sausage that is curled as a traditional Cumberland sausage would be found but with a distinctive South African taste and smell; perfect either cooked on a BBQ and eaten with a fresh salad or just as amazing grilled or fried with some good old English mash and gravy.

Recent winners of the Cheshire’s Dabbers Den Business Award 2018 accompanied by £5k and a 12 months of business support.
